Vanilla Cupcakes
As some of you may already know, I am not a big fan of vanilla. So, vanilla or white cakes are not something I dabble with very often. Still, sometimes chocolate needs a break, or you’re making something for someone that is not a fan of chocolate (seriously, what’s wrong with those people!?). A few years ago, I came across this recipe for a Chocolate Covered Oreo Cake online. I thought that the idea was brilliant, but I wasn’t keen on the idea of using boxed cake mix and Cool Whip. Black Bottom Cupcakes
Black bottom cupcakes are the best of two worlds: chocolate cake and cheesecake. They incorporate a rich chocolate cupcake with a dollop of cheesecake batter, which then get baked together into something magical. I don’t remember exactly when I first came across this recipe, but I know that it didn’t take long for me to talk myself into trying it out. I believe that I was introduced to this recipe by Smitten Kitchen, who credits the source of the recipe as David Lebovitz’s Great Book of Chocolate. After my first batch, I was hooked. (more…)

White Chocolate Raspberry Mini Cheesecakes
Once upon a time, I was at The Olive Garden with a friend of mine. For dessert, she ordered their white chocolate raspberry cheesecake. She loved it so much that she insisted that I learn to make it. At the time, I was just getting my feet wet in the art of making cheesecakes, so this was a pretty daunting task. I eventually found a recipe that yielded an excellent result. (more…)

Sugar Cream Pie
It would be an absolute lie if I said that I would have ever come across this recipe if I didn’t have a quart of half-and-half sitting in my fridge that I had no idea what to do with. As it turns out, I’ve been missing out. The Hoosiers were on to something when they came up with Sugar Cream Pie. I love creamy, custardy pies. And, since this pie doesn’t use any eggs, it is good for accommodating egg allergies. (more…)

Mini Chocolate Bundt Cakes
Thanks to a friend of mine, I found out that Bed, Bath, and Beyond was having a clearance sale on some of their bakeware. One of the baking pans that I managed to score was a mini bundt pan from Wilton. It was just so cute, and the sizes were perfect for individual servings. Naturally, it didn’t take me very long to succumb to the urge to try it out. (more…)

Molten Chocolate Cake
One upon a time, a molten chocolate cake or chocolate lava cake was classy ending to a fancy meal. Then, it started cropping up at chains like Red Lobster, Chili’s, and Applebee’s. And, when you can get a dessert at a place where a group of servers will sing to you on your birthday while cursing their lot in life, there is no room for pretentiousness. (more…)

Flan
Flan, or creme caramel, is one of those things that you either love or hate. I didn’t like it at first, but then grew to love it. I have a soft spot for custard-based desserts, so it’s right up my alley. The premise is simple. Fill the bottom of a ramekin with caramelized sugar, fill it with custard, bake, and then flip it over onto a plate and enjoy! (more…)
