    A few years ago, I came across this recipe for a Chocolate Covered Oreo Cake online.  I thought that the idea was brilliant, but I wasn’t keen on the idea of using boxed cake mix and Cool Whip.  For the record, I hate Cool Whip.  Let’s just get that out of the way right now, and we can all be friends, okay?  Whip your own cream, people!  Assuming you have an electric mixer of some kind, you can do it!  Trust me.     Black Bottom Cupcakes

    Black bottom cupcakes are the best of two worlds: chocolate cake and cheesecake.  They incorporate a rich chocolate cupcake with a dollop of cheesecake batter, which then get baked together into something magical.  I don’t remember exactly when I first came across this recipe, but I know that it didn’t take long for me to talk myself into trying it out.  I believe that I was introduced to this recipe by Smitten Kitchen, who credits the source of the recipe as David Lebovitz’s Great Book of Chocolate.  After my first batch, I was hooked.     Once upon a time, I was at The Olive Garden with a friend of mine.  For dessert, she ordered their white chocolate raspberry cheesecake.  She loved it so much that she insisted that I learn to make it.  At the time, I was just getting my feet wet in the art of making cheesecakes, so this was a pretty daunting task.  I eventually found a recipe that yielded an excellent result.     It would be an absolute lie if I said that I would have ever come across this recipe if I didn’t have a quart of half-and-half sitting in my fridge that I had no idea what to do with.  As it turns out, I’ve been missing out.  The Hoosiers were on to something when they came up with Sugar Cream Pie.  I love creamy, custardy pies.  And, since this pie doesn’t use any eggs, it is good for accommodating egg allergies.     Doña Rosa’s Rice Pudding Empanadas

    Rice pudding, I’ve noticed, comes in many different varieties.  Still, my experiences with rice pudding have always been where it is served in a bowl for you to eat with a spoon.  So, when my aunt mentioned the rice pudding empanadas that my grandmother used to make, it was definitely a surprise.  As it turns out, rice pudding empanadas do exist in parts of South America.  However, most of the recipes that I found used pastry or pie dough for the crust.  My aunt insists that these were made with pandebono dough, which is a Colombian cheese bread.  She offered to share this recipe with me, so shout out and thanks to you for your contribution to my blog!     Mini Chocolate Bundt Cakes

    Thanks to a friend of mine, I found out that Bed, Bath, and Beyond was having a clearance sale on some of their bakeware.  One of the baking pans that I managed to score was a mini bundt pan from Wilton.  It was just so cute, and the sizes were perfect for individual servings.  Naturally, it didn’t take me very long to succumb to the urge to try it out.     Tamales, depending on their country of origin, come in many shapes and sizes.  Despite this, the basic idea is the same.  You get yourself some masa, your filling of choice, then wrap it up in a leaf and boil or steam it.  Several hours later, you’ve got yourself a packet of deliciousness.     Lemon Risotto

    If you have never had risotto, then shame on you.  If you have no idea what risotto even is, then shame on you even more.  This Italian dish is essentially creamy rice, and is usually served as a first course or main dish, although it can also be a side dish.  Unlike conventional rice cooking methods, in which you add all of your liquid to the rice at the start, risotto achieves its creamy consistency by slowly and gradually adding liquid to the rice while it cooks.  The liquid is usually broth.  Chicken broth seems to be the popular way to go, although beef, fish, seafood, or vegetable broth can also be used.
