I don’t know how many people would actually think of mac and cheese when they think of gourmet food. Mac and cheese, to me, was always a comfort food or cookout/BBQ staple. So, when I first saw lobster mac and cheese on the menu at Capital Grille, I knew I had to try it. For one, I had to know how a fine dining establishment would interpret mac and cheese. For another, there is always a good chance that I may never be able to afford this kind of meal again. These are troubled times, and I’m not a broke baker for nothing! (more…)

Flan
Flan, or creme caramel, is one of those things that you either love or hate. I didn’t like it at first, but then grew to love it. I have a soft spot for custard-based desserts, so it’s right up my alley. The premise is simple. Fill the bottom of a ramekin with caramelized sugar, fill it with custard, bake, and then flip it over onto a plate and enjoy! (more…)

Chocolate Cappuccino Cheesecake

You know those people that go to the grocery store and grab a bunch of stuff that they don’t need because it’s on sale? Well, guilty as charged. In particular, I grab ingredients that might come in handy for baking. I can’t help myself. It goes into my shopping cart as I imagine all of the delicious things that I might be able to do with it. Creme Brulee Donuts
Skip to Recipe
I don’t remember what exactly made me start thinking about donuts again. All I know is that, for about a week, they were quite imprinted in my mind. Then, while looking up recipes for donuts, I came across a recipe for creme brulee donuts that caught my eye. Why did no one think of this sooner!? More importantly, why are the only donut shops where one can buy them so far away? So, I made it my weekend project to give these a whirl. (more…) -

Kalua Pork in an Electric Roaster

Pretty much every movie or TV sitcom that finds the characters in Hawaii will feature a luau. And, one of the staples of any luau is Kalua pig. The word Kalua actually means “to cook in an underground oven.” So, as the name implies, Kalua pig refers to pig that is cooked in an imu (a type of underground oven). (more…) -

Pastel Imposible (AKA Chocoflan)
I love chocolate cake. I love flan. So, what happens when you combine the two? Pure excellence! Pastel imposible translates into “impossible cake” for you non-Spanish speakers, and it gets its name from the seemingly impossible feat of layering creamy flan on a bed of dense chocolate cake. It is believed that this dessert originated in Mexico, where it is still very popular to this day. (more…)

Say No to Crack (another Empanada post)
Crack kills, mmkay?
Colombian empanadas, while utterly delicious, are a bit of a pain to make. Seasoned cooks can probably crank them out with little trouble. I am not, however, a particularly seasoned cook when Colombian cuisine is concerned. Most dishes are so time-consuming and extensive, that I don’t make them often. As such, I don’t get a whole lot of practice. (more…)

Vegan Empanadas
Vegan food, to me, is a scary thing. Being a self-proclaimed foodie, it would be a hard thing for me to do – giving up entire food groups for the rest of your life. Heck, I struggle to stick to a 1700 calorie-a-day diet. But, we won’t talk about that too much. (more…)

Red Velvet Waffles
Red velvet cake was, for a long time, something that I refused to try. In fact, the first time I made it (at someone’s request), I didn’t even like it. It took a while for me to decide to try a different recipe, which turned out FANTASTIC! So, with boyfriends being a notable exception, it never hurts to give things another chance when they fail to impress you the first time. (more…)
